Emily Mariko’s name has been popping up everywhere and if you’ve seen a salmon rice dish all over TikTok, chances are it’s Mariko’s. The food-fashion-and-lifestyle influencer makes easy, healthy food with an Asian touch and her TikTok following has grown from 70,000 to over 3.5 million in just the past month. Here’s why the 29-year-old blogger from California has gotten so much attention.

Mariko’s most viewed and shared TikTok video is of her smashing leftover salmon with a fork and it has a whopping 4.4 million likes. The salmon rice bowl with Kewpie mayo, Siracha, soy sauce, avocado, kimchi, and dried seaweed, has gone viral and tons of people are recreating it. It’s the best way to use leftover salmon.

She also has other versions of the recipe, which have her using different sides like takuan (yellow pickled daikon radish), instead of kimchi. Mariko has even taken advice from other users which suggested she add avocado, Kewpie mayo, and ice cubes to help steam the rice.

The best part of her dishes is they seem super easy to recreate and you don’t have to be a professional chef to make them. They also use minimal ingredients and use leftovers.
